  1. 1. Pour coconut milk and regular milk into a pot.
  2. 2. Bring the milk mixture to a boil.
  3. 3. Stir in the rice pudding mix.
  4. 4. Let it simmer gently on low heat for 5 to 10 minutes.
  5. 5. Remove the pot from the heat.
  6. 6. Let the rice swell and absorb the liquid for another 30 to 35 minutes.
  7. 7. Dice the ginger into very small cubes.
  8. 8. Set aside 20 grams of these cubes for later decoration.
  9. 9. Stir the remaining ginger into the rice.
  10. 10. Add sugar, the finely grated zest of a lime, and vanilla sugar.
  11. 11. Allow the mixture to cool down completely.
  12. 12. Whip the cream until stiff.
  13. 13. Sprinkle the instant gelatin (gelatin that does not require pre-soaking) evenly over it.
  14. 14. Continue whipping until dissolved.
  15. 15. Gently fold the whipped cream into the cooled rice.
  16. 16. Transfer the mixture into a bowl.
  17. 17. Refrigerate for 1 hour to let it set.
  18. 18. Garnish the finished coconut cream rice with fresh lime slices.
  19. 19. Add mint leaves.
  20. 20. Use the ginger cubes set aside earlier as decoration.
