🍰 Moist Coconut Plum Cake

Ingredients
- 180 g Skyr
- 580 g Spelt whole wheat flour (and some flour for working if needed)
- 100 g Apple puree
- 4 tbsp Honey
- 1 pinch Salt
- 3 tbsp Milk (3.5% fat)
- 4 tbsp Vegetable oil
- 2 Eggs
- 1 tbsp Baking powder
- 3 tbsp Whole wheat breadcrumbs
- 1 kg ripe blue plums
- 1 tbsp Cinnamon
- 80 g Coconut blossom sugar
- 80 g Coconut flakes
- 100 g melted Butter
Instructions
- 1. Preheat your oven to 180 degrees Celsius conventional heat (160 degrees Celsius fan-forced or gas level 2 to 3).
- 2. Line a baking tray with baking paper.
- 3. Place quark, 400 grams of flour, apple puree, 2 tablespoons of honey, a pinch of salt, some milk, oil, eggs, and baking powder into a large bowl.
- 4. Work all ingredients into a smooth dough.
- 5. Spread the dough out on the prepared baking tray.
- 6. Press a small rim up along the edges of the dough.
- 7. Spread the breadcrumbs evenly over the bottom of the dough.
- 8. Wash the plums thoroughly under running water.
- 9. Halve the plums and remove the pits.
- 10. Cut the plum halves into wedges.
- 11. Mix the plum wedges with the remaining honey and cinnamon.
- 12. Arrange the plum wedges in an overlapping shingle pattern on the dough base.
- 13. Place the remaining flour, coconut blossom sugar, coconut flakes, and butter into a small bowl.
- 14. Work the ingredients into a crumbly streusel dough.
- 15. Rub the dough between your hands to form small crumbs.
- 16. Distribute the crumbs evenly over the cake.
- 17. Bake the cake in the preheated oven for 40 to 45 minutes until golden brown.
- 18. Remove the cake from the oven and let it cool down completely.
- 19. Cut the cooled cake into strips.
- 20. Serve the cake strips with whipped cream as desired.
