🍰 Tropical Coconut Rice with Mango

Ingredients
- 400 ml low-fat coconut milk
- 100 ml milk (1.5% fat)
- 30 g raw cane sugar (1.5 tbsp)
- 1 packet vanilla sugar
- 80 g rice flakes
- 30 g coconut chips
- 400 g ripe mango (1 ripe mango)
- 0.5 lime
Instructions
- 1. Put coconut milk, regular milk, sugar, and vanilla sugar into a pot.
- 2. Heat the mixture over medium heat until it comes to a boil.
- 3. Stir in the rice flakes.
- 4. Cook the rice according to the instructions on the package.
- 5. Place the coconut chips in a dry frying pan.
- 6. Toast them over low heat, stirring constantly.
- 7. Remove the toasted coconut chips from the pan.
- 8. Place them on a plate and let them cool down.
- 9. Peel the mango.
- 10. Cut the flesh away from the pit.
- 11. Cut the fruit flesh into small cubes.
- 12. Put the mango cubes into a bowl.
- 13. Squeeze the lime half.
- 14. Drizzle the lime juice over the mango pieces.
- 15. Fill the finished coconut rice into cups or small bowls.
- 16. Garnish the dessert with the mango pieces and the cooled coconut chips.
- 17. Serve the rice immediately.
