🍰 Exotic Coconut Rice Pudding with Fresh Fruit

Ingredients
- 1 lime
- 200 ml milk (1.5% fat)
- 250 ml coconut milk (9% fat)
- 1 pinch salt
- 1 tsp yogurt butter
- 40 g sugar (2 tbsp)
- 125 g rice pudding rice
- 1 banana
- pineapple
- 1 papaya
- 1 mango
Instructions
- 1. Rinse the lime under hot water.
- 2. Finely grate the lime zest.
- 3. Squeeze the lime to extract the juice.
- 4. Pour the milk and coconut milk into a pot.
- 5. Add a pinch of salt, the butter, and the sugar.
- 6. Heat the milk while stirring occasionally until it boils.
- 7. Add the rice pudding mix to the boiling milk.
- 8. Bring the rice to a brief boil while stirring.
- 9. Reduce the heat to the lowest setting.
- 10. Cover the pot with a lid.
- 11. Let the rice pudding swell for 30 to 35 minutes.
- 12. Add a little more milk as needed.
- 13. Stir in a small amount of lime zest into the finished rice.
- 14. Peel the exotic fruits while the rice is cooking.
- 15. Cut out the tough core from the pineapple.
- 16. Remove the seeds from the papaya and mango.
- 17. Cut the fruits into small pieces or slices.
- 18. Arrange the fruits decoratively on plates.
- 19. Drizzle the lime juice over the fruit.
- 20. Distribute the warm rice pudding over the fruit.
- 21. Serve the dish immediately.
