🍝 Creamy Coconut Noodles with Berries

Ingredients
- 500 ml almond milk (or another plant-based milk)
- 150 ml coconut milk
- 125 g lentil or whole grain pasta
- 200 g raspberries
- 1 tbsp cinnamon
- 1 tsp chia seeds
- 300 g strawberries
- 1 tsp hemp seeds
- 1 handful fresh basil leaves
Instructions
- 1. Pour the almond drink and coconut milk into a pot.
- 2. Heat the mixture over medium heat until it briefly comes to a boil.
- 3. Add the noodles to the pot.
- 4. Cook the noodles, stirring constantly, until they are done.
- 5. A few minutes before the end of the cooking time, add the raspberries, cinnamon, and chia seeds.
- 6. Let everything simmer gently for 2 to 3 minutes.
- 7. If the mixture is too thick, add a little more almond drink.
- 8. Wash the strawberries and remove the green tops.
- 9. Cut the strawberries into quarters.
- 10. Fold the strawberries into the noodle mixture at the very end.
- 11. Garnish the dish with hemp seeds and fresh basil leaves.
- 12. Sweeten to taste, for example with maple syrup.
