🍽️ Creamy Chard and Coconut Soup

Ingredients
- 600 g chard
- 2 onions
- 1 clove garlic
- 1 red chili pepper
- 20 g butter
- 600 ml vegetable broth
- 300 ml coconut milk
- 100 ml whipping cream
- salt
- cayenne pepper
- 2 tsp curry powder
- 1 dash lemon juice
Instructions
- 1. Wash the chard thoroughly and remove the tough stems.
- 2. Spin the chard dry and slice the greens into thin strips.
- 3. Peel the onion and the garlic.
- 4. Dice the onion and garlic into small cubes.
- 5. Wash the chili pepper and cut it in half lengthwise.
- 6. Remove the seeds from the chili and finely chop the flesh.
- 7. Heat the butter in a large pot.
- 8. Add the onions, garlic, and chili to the pot.
- 9. Sauté the vegetables over medium heat until they are translucent and soft.
- 10. Add the chopped chard to the pot.
- 11. Deglaze the mixture with the vegetable broth and coconut milk.
- 12. Stir the cream into the soup.
- 13. Let the soup simmer over medium heat for about 10 minutes.
- 14. Season the soup with salt, cayenne pepper, curry powder, and a splash of lemon juice.
- 15. Taste the soup and adjust the seasoning if necessary.
- 16. Pour the finished soup into bowls.
- 17. Serve the soup hot.
