🍰 Fresh Melon Quark with Toasted Coconut and Lemon

Ingredients
- 1 tbsp coconut flakes
- 0.5 honeydew melon (approx. 200 g flesh)
- 1 sprig lemon balm
- 0.5 lemon
- 100 g low-fat quark
- 150 ml kefir
- 1 tbsp maple syrup
Instructions
- 1. Put the coconut flakes into a non-stick pan.
- 2. Toast the coconut flakes without adding extra fat.
- 3. Remove the pan from the heat and let the coconut flakes cool down on a plate.
- 4. Remove the seeds from the melon.
- 5. Cut the melon into wedges.
- 6. Peel the melon wedges.
- 7. Cut the melon flesh into small cubes.
- 8. Wash the lemon balm thoroughly.
- 9. Shake the lemon balm dry.
- 10. Pluck the leaves from the stems.
- 11. Cut the lemon balm leaves into thin strips.
- 12. Squeeze half of a lemon.
- 13. Pour the lemon juice into a bowl.
- 14. Add the quark to the bowl with the lemon juice.
- 15. Add the kefir to the bowl.
- 16. Add the maple syrup to the bowl.
- 17. Stir the quark, kefir, and maple syrup well.
- 18. Add the cooled coconut flakes to the quark mixture.
- 19. Gently fold in the melon cubes.
- 20. Let the mixture rest for about 5 minutes.
- 21. Portion the coconut-kefir quark into two small bowls.
- 22. Sprinkle the dessert with the cut lemon balm leaves.
- 23. Serve the dish immediately.
