  2. 2. Toast the coconut flakes without adding extra fat.
  3. 3. Remove the pan from the heat and let the coconut flakes cool down on a plate.
  4. 4. Remove the seeds from the melon.
  5. 5. Cut the melon into wedges.
  6. 6. Peel the melon wedges.
  7. 7. Cut the melon flesh into small cubes.
  8. 8. Wash the lemon balm thoroughly.
  9. 9. Shake the lemon balm dry.
  10. 10. Pluck the leaves from the stems.
  11. 11. Cut the lemon balm leaves into thin strips.
  12. 12. Squeeze half of a lemon.
  13. 13. Pour the lemon juice into a bowl.
  14. 14. Add the quark to the bowl with the lemon juice.
  15. 15. Add the kefir to the bowl.
  16. 16. Add the maple syrup to the bowl.
  17. 17. Stir the quark, kefir, and maple syrup well.
  18. 18. Add the cooled coconut flakes to the quark mixture.
  19. 19. Gently fold in the melon cubes.
  20. 20. Let the mixture rest for about 5 minutes.
  21. 21. Portion the coconut-kefir quark into two small bowls.
  22. 22. Sprinkle the dessert with the cut lemon balm leaves.
