🍲 Creamy Pea Coconut Soup

Ingredients
- 1 onion
- 20 g ginger root
- 1 tbsp sesame oil
- 300 g frozen peas
- 400 ml coconut milk
- 500 ml vegetable broth
- salt
- pepper
- 0.5 tsp coriander seeds
- 1 tsp black sesame
- 1 tsp white sesame
- 5 g coriander leaves (1 handful)
- 1 tbsp lime juice
Instructions
- 1. Peel the onion and the ginger root.
- 2. Dice the onion into very small cubes.
- 3. Finely chop the ginger.
- 4. Put the oil in a pot and heat it.
- 5. Sauté the onions and ginger in it for 3 minutes over medium heat.
- 6. Add the peas.
- 7. Sauté the peas for another 3 minutes.
- 8. Pour in 350 ml of coconut milk and the broth.
- 9. Bring the mixture to a boil.
- 10. Let it simmer gently for about 5 minutes.
- 11. Season the soup with salt and pepper.
- 12. Toast the coriander seeds together with both types of sesame seeds in a hot pan over medium heat for about 3 minutes until they smell fragrant.
- 13. Remove the mixture from the pan.
- 14. Lightly crush it in a mortar.
- 15. Wash the fresh coriander leaves.
- 16. Shake them dry.
- 17. Chop them coarsely.
- 18. Blend the pea coconut soup until smooth.
- 19. Add a little more broth if needed to reach the desired consistency.
- 20. Season with lime juice, salt, and pepper.
- 21. Drizzle the finished soup with the remaining coconut milk.
- 22. Serve it sprinkled with the toasted spice mixture and fresh coriander leaves.
