🍽️ Coconut Mushroom Curry with Fragrant Rice

Ingredients
- 500 g mushrooms
- 2 garlic cloves (finely chopped)
- salt
- 0.5 tsp black peppercorns
- 1 chili pepper (seeded and finely chopped)
- 2 star anise
- 1 tbsp palm sugar
- 400 ml coconut milk
- sesame oil
- 300 g fragrant rice
- 1 lime (juice)
- lime wedges
- parsley (for garnishing)
Instructions
- 1. Thoroughly wash the mushrooms.
- 2. Cut the mushrooms in half.
- 3. Crush the chili, garlic, pepper, and 1 teaspoon of salt in a mortar to form a fine paste.
- 4. Heat 2 tablespoons of oil in a pot.
- 5. Fry the mushrooms on all sides.
- 6. Add the spice paste and fry it briefly with the mushrooms.
- 7. Add the star anise pods, palm sugar, and coconut milk.
- 8. Simmer the curry over low heat for about 5 to 10 minutes.
- 9. Cook the fragrant rice according to the package instructions.
- 10. Divide the mushrooms into small bowls.
- 11. Serve the curry together with the fragrant rice.
- 12. Garnish the dish with parsley.
- 13. Drizzle the curry with lime juice.
- 14. Serve lime wedges on the side.
