  1. 1. Put the sunflower seeds into a dry pan.
  2. 2. Toast the seeds over medium heat until they are golden brown and crunchy.
  3. 3. Remove the pan from the heat and let the seeds cool down.
  4. 4. Pick the leaves off the lemon balm stems.
  5. 5. Finely chop the lemon balm.
  6. 6. Wash the kohlrabi thoroughly under running water.
  7. 7. Peel off the tough outer skin from the kohlrabi.
  8. 8. Grate the kohlrabi flesh finely using a grater.
  9. 9. Place the grated kohlrabi into a large bowl.
  10. 10. Finely chop the chervil and add it to the kohlrabi.
  11. 11. Add the chopped lemon balm to the mixture.
  12. 12. Add the cooled sunflower seeds.
  13. 13. Mix all ingredients in the kohlrabi well together.
  14. 14. Slice the apple into very thin slices.
  15. 15. Arrange the apple slices on two serving plates.
  16. 16. Distribute the kohlrabi mixture evenly over the apple slices.
  17. 17. Place the yogurt into a small bowl.
  18. 18. Add some salt and mustard to the yogurt.
  19. 19. Stir the sauce smooth with a spoon or whisk.
  20. 20. Pour the yogurt sauce over the finished salad.
