  1. 1. Peel the carrots and grate them finely. In a separate bowl, whisk together the oil, lemon juice, honey, salt, and two tablespoons of warm water until smooth. Stir in the grated carrots and let the mixture sit for a moment to absorb the flavors.
  2. 2. Wash a few nice kohlrabi leaves and set them aside for garnish. Peel the kohlrabi bulbs and cut them into thin noodles using a spiralizer. Peel the shallot and chop it finely. Mix the shallot with the kohlrabi, add the prepared dressing, and season to taste.
  3. 3. Serve the salad on plates, garnish with cress and the reserved kohlrabi leaves. Place one washed, halved tomato on the side and enjoy the dish.
