🍽️ Creamy Kohlrabi with Herbs

Ingredients
- 1 onion
- 3 kohlrabi
- 0.5 bunch parsley (10 g)
- 1 handful dill
- 1 tbsp rapeseed oil
- 200 ml vegetable broth
- 150 g crème fraîche
- salt
- pepper
- nutmeg
- 1 tsp lemon juice
- 1 tbsp cornstarch
Instructions
- 1. Peel the onion and cut it into small cubes.
- 2. Clean the kohlrabi, remove the tough skin, and slice it into rounds.
- 3. Cut the kohlrabi slices further into thin strips.
- 4. Wash the parsley and dill and shake off excess water.
- 5. Pick off the parsley leaves and dill tips and chop them finely.
- 6. Heat the oil in a pot.
- 7. Sauté the onion cubes over medium heat for 2 minutes.
- 8. Add the kohlrabi strips and cook them along with the onions for another 3 minutes.
- 9. Deglaze the vegetables with the broth.
- 10. Bring the mixture to a boil.
- 11. Reduce the heat to low to medium.
- 12. Simmer the vegetables covered for 10 to 15 minutes.
- 13. Stir the crème fraîche into the vegetables.
- 14. Season the mixture with salt, pepper, freshly grated nutmeg, and lemon juice.
- 15. Mix the cornstarch with a small amount of cold water to form a smooth paste.
- 16. Add the cornstarch paste to the kohlrabi mixture.
- 17. Bring the sauce to a boil again while stirring constantly until it thickens.
- 18. Transfer the finished dish into a pre-warmed serving bowl.
- 19. Sprinkle the dish with the chopped herbs and serve.
