🍽️ Crispy Kohlrabi Tart

Ingredients
- 150 g flour
- 150 g butter
- 150 g quark
- salt
- pepper (from the mill)
- 1 kg kohlrabi

- 100 g quark
- 150 g crème fraîche
- 2 eggs
- 70 g parmesan
- 2 tbsp chive rings
- 2 tbsp almond kernels
- butter (for the pan)
- flour (for the work surface)
Instructions
- 1. Put flour, small butter cubes, and quark into a bowl.
- 2. Season the ingredients with salt and pepper.
- 3. Knead everything with the dough hooks of an electric hand mixer into a soft dough.
- 4. Cover the bowl.
- 5. Place it in the refrigerator for 30 minutes.
- 6. Peel the kohlrabi.
- 7. Slice or shred it into thin pieces.
- 8. Boil the slices for 5 minutes in boiling salted water.
- 9. Drain the water.
- 10. Let the kohlrabi drip dry.
- 11. Mix quark with crème fraîche.
- 12. Add the eggs and Parmesan.
- 13. Season the mixture generously with salt and pepper.
- 14. Stir in the chopped chives.
- 15. Preheat the oven to 200 degrees (conventional or fan-assisted).
- 16. Roll out the dough on a lightly floured work surface.
- 17. Line the buttered tin with it.
- 18. Form a crust about 3 cm high.
- 19. Place the kohlrabi slices on the dough base.
- 20. Lightly salt and pepper each layer.
- 21. Pour the egg-quark mixture over them.
- 22. Sprinkle almonds over it.
- 23. Bake the tart in the preheated oven in the center for approx. 40 minutes.
- 24. Remove it.
- 25. Release it from the tin.
- 26. Serve immediately.
