  1. 1. Peel the kohlrabi thoroughly.
  2. 2. Cut the kohlrabi in half.
  3. 3. Slice the halves into long, thin strips using a vegetable peeler or mandoline.
  4. 4. Cut the slices into thin strips with a sharp knife.
  5. 5. Place the kohlrabi strips in a bowl.
  6. 6. Sprinkle them with a little salt.
  7. 7. Let the strips sit for ten minutes to draw out moisture.
  8. 8. Toast the sesame seeds in a small pan without fat.
  9. 9. Remove the pan from the heat and let the sesame seeds cool down.
  10. 10. Rinse the lemon under hot water.
  11. 11. Dry the lemon with a cloth.
  12. 12. Peel a wide strip of the zest very thinly.
  13. 13. Cut the lemon zest into thin strips.
  14. 14. Squeeze the lemon.
  15. 15. Squeeze the kohlrabi strips lightly.
  16. 16. Add the lemon zest and one to two teaspoons of lemon juice to the bowl.
  17. 17. Season the salad with black pepper.
  18. 18. Fold in half of the sesame seeds.
  19. 19. Plate the salad.
  20. 20. Sprinkle with the remaining sesame seeds.
  21. 21. Serve the salad immediately.
