🍽️ Crispy Kohlrabi Salad with Sesame

Ingredients
- 500 g kohlrabi (1 kohlrabi)
- salt
- 10 g unpeeled sesame
- 0.5 small organic lemon
- pepper
Instructions
- 1. Peel the kohlrabi thoroughly.
- 2. Cut the kohlrabi in half.
- 3. Slice the halves into long, thin strips using a vegetable peeler or mandoline.
- 4. Cut the slices into thin strips with a sharp knife.
- 5. Place the kohlrabi strips in a bowl.
- 6. Sprinkle them with a little salt.
- 7. Let the strips sit for ten minutes to draw out moisture.
- 8. Toast the sesame seeds in a small pan without fat.
- 9. Remove the pan from the heat and let the sesame seeds cool down.
- 10. Rinse the lemon under hot water.
- 11. Dry the lemon with a cloth.
- 12. Peel a wide strip of the zest very thinly.
- 13. Cut the lemon zest into thin strips.
- 14. Squeeze the lemon.
- 15. Squeeze the kohlrabi strips lightly.
- 16. Add the lemon zest and one to two teaspoons of lemon juice to the bowl.
- 17. Season the salad with black pepper.
- 18. Fold in half of the sesame seeds.
- 19. Plate the salad.
- 20. Sprinkle with the remaining sesame seeds.
- 21. Serve the salad immediately.
