🍽️ Stuffed Kohlrabi with Raisins and Carrots

Ingredients
- 4 small kohlrabi
- 30 g raisins
- 150 g carrots
- 100 g crème fraîche (5 tbsp)
- salt
- pepper
- 1 tsp butter
- 4 tbsp vegetable broth
- 4 stalks parsley
Instructions
- 1. Peel the skin off the kohlrabi.
- 2. Carefully hollow out the kohlrabi, leaving a shell.
- 3. Finely chop the removed kohlrabi flesh.
- 4. Soak the raisins in lukewarm water.
- 5. Wash and peel the carrots.
- 6. Cut the carrots into fine cubes.
- 7. Squeeze the soaked raisins well to remove excess water.
- 8. Mix the raisins, carrot cubes, 3 tablespoons of sour cream, and the chopped kohlrabi flesh in a bowl.
- 9. Season the filling with salt and pepper.
- 10. Fill the hollowed-out kohlrabis with the mixture.
- 11. Grease a baking dish with butter.
- 12. Place the stuffed kohlrabis into the dish.
- 13. Pour some broth around the kohlrabis.
- 14. Cover the baking dish.
- 15. Preheat the oven to 175 °C (convection 150 °C or gas mark 2).
- 16. Braise the kohlrabis in the oven for 35 to 40 minutes.
- 17. Wash the parsley while the kohlrabi is cooking.
- 18. Shake the parsley dry.
- 19. Finely chop the parsley.
- 20. Divide the cooked kohlrabis among 4 plates.
- 21. Garnish each plate with 1 teaspoon of sour cream.
- 22. Sprinkle the chopped parsley over the top.
