🍽️ Stuffed Kohlrabi in Cream Sauce

Ingredients
- 4 kohlrabi
- 1 shallot
- 300 g minced meat
- salt
- pepper (from the mill)
- 200 g floury potatoes
- 2 tbsp butter
- 150 ml vegetable broth
- 100 ml whipping cream
- 2 tbsp freshly chopped parsley
Instructions
- 1. Peel the kohlrabi and slice the bottom flat.
- 2. Finely chop the tender kohlrabi greens.
- 3. Hollow out the kohlrabi using a teaspoon or a melon baller.
- 4. Steam the hollowed kohlrabi for about 10 minutes.
- 5. Shock the kohlrabi briefly with cold water and pat them dry.
- 6. Dice the hollowed-out kohlrabi flesh finely.
- 7. Peel the shallot and dice it finely as well.
- 8. Mix the minced meat with the diced kohlrabi pieces, the chopped greens, and the shallot.
- 9. Season the filling generously with salt and pepper.
- 10. Fill the kohlrabi with the mixture.
- 11. Peel the potatoes and dice them very small.
- 12. Sweat the potato cubes together with the kohlrabi cubes briefly in hot butter until they are colorless.
- 13. Deglaze the mixture with the broth.
- 14. Add the cream and bring the sauce to a boil.
- 15. Season the sauce with salt and pepper.
- 16. Place the stuffed kohlrabi into the sauce.
- 17. Simmer the kohlrabi covered for 15 to 20 minutes over low heat until tender.
- 18. Remove the cooked kohlrabi from the sauce and place them on small plates.
- 19. Reduce the sauce by simmering it a bit more if necessary until it reaches the desired consistency.
- 20. Taste the sauce and adjust the seasoning if needed.
- 21. Pour the sauce around the kohlrabi.
- 22. Sprinkle the dish with parsley and serve.
