  1. 1. Peel the kohlrabi and slice the bottom flat.
  2. 2. Finely chop the tender kohlrabi greens.
  3. 3. Hollow out the kohlrabi using a teaspoon or a melon baller.
  4. 4. Steam the hollowed kohlrabi for about 10 minutes.
  5. 5. Shock the kohlrabi briefly with cold water and pat them dry.
  6. 6. Dice the hollowed-out kohlrabi flesh finely.
  7. 7. Peel the shallot and dice it finely as well.
  8. 8. Mix the minced meat with the diced kohlrabi pieces, the chopped greens, and the shallot.
  9. 9. Season the filling generously with salt and pepper.
  10. 10. Fill the kohlrabi with the mixture.
  11. 11. Peel the potatoes and dice them very small.
  12. 12. Sweat the potato cubes together with the kohlrabi cubes briefly in hot butter until they are colorless.
  13. 13. Deglaze the mixture with the broth.
  14. 14. Add the cream and bring the sauce to a boil.
  15. 15. Season the sauce with salt and pepper.
  16. 16. Place the stuffed kohlrabi into the sauce.
  17. 17. Simmer the kohlrabi covered for 15 to 20 minutes over low heat until tender.
  18. 18. Remove the cooked kohlrabi from the sauce and place them on small plates.
  19. 19. Reduce the sauce by simmering it a bit more if necessary until it reaches the desired consistency.
  20. 20. Taste the sauce and adjust the seasoning if needed.
  21. 21. Pour the sauce around the kohlrabi.
  22. 22. Sprinkle the dish with parsley and serve.
