🍽️ Kohlrabi Rings with Herb Cream

Ingredients
- 2 Kohlrabi
- 300 ml Vegetable stock
- Olive oil (cold-pressed)
- Salt
- Pepper (from the mill)
- freshly squeezed lemon juice
- 400 g Cream cheese (e.g. Philadelphia)
- 3 tbsp fresh finely chopped mixed herbs (parsley, basil, mint... )
Instructions
- 1. Peel the kohlrabi completely.
- 2. Slice the vegetable into rounds 2 to 3 millimeters thick.
- 3. Heat vegetable stock in a shallow pot.
- 4. Add the kohlrabi slices in batches to the hot water for 30 seconds.
- 5. Remove the slices with a slotted spoon.
- 6. Let the slices drain.
- 7. Lay the slices side by side on a kitchen towel to cool down.
- 8. Mix the cream cheese with the herbs.
- 9. Season the mixture with some pepper.
- 10. Place the cooled kohlrabi slices on the plates.
- 11. Drizzle 4 tablespoons of high-quality olive oil over the slices.
- 12. Season the dish with salt.
- 13. Add plenty of freshly ground pepper.
- 14. Place the cream cheese portion for one person into a small fine-mesh sieve.
- 15. Press the cheese in the sieve slightly.
- 16. Invert the sieve over the kohlrabi.
- 17. Let the cheese fall onto the kohlrabi as a flat disc.
- 18. Sprinkle the dish with coarsely ground pepper.
- 19. Optionally add a squeeze of lemon juice.
- 20. Serve the dish with crispy, fresh white bread.
