🍽️ Kohlrabi Potato Soup

Ingredients
- 250 g kohlrabi
- 100 g sweet potatoes
- 60 g onions
- 1 pinch finely chopped chili peppers
- 20 g butter
- 100 ml white wine
- 650 ml vegetable stock
- 200 ml whipping cream
- salt
- pepper (from the mill)
- 1 tbsp finely chopped chervil
- 1 tbsp finely chopped kohlrabi greens
- 15 g black pickled truffles
- chervil leaves (for garnishing)
- a little truffle oil (for drizzling)
Instructions
- 1. Peel the kohlrabi, potatoes, and onions. Cut everything into small cubes.
- 2. Melt the butter in a pot. Sauté the kohlrabi, potatoes, onion, and chili briefly. Deglaze with white wine and reduce the liquid by half.
- 3. Pour in the stock and cream. Bring the soup to a boil, reduce the heat, and let it simmer covered for 15 to 20 minutes.
- 4. Blend the soup finely with a hand blender. Season to taste and stir in the herbs. Ladle the soup into pre-warmed bowls.
- 5. Slice the truffle thinly. Place the slices and the chervil leaves on top of the soup. Drizzle a few drops of truffle oil over it.
