  1. 1. Wash the kohlrabi, potatoes, and carrots thoroughly.
  2. 2. Remove tough skins and peel the vegetables.
  3. 3. Slice everything into thin, even rounds.
  4. 4. Place the sliced vegetables into a baking dish.
  5. 5. Season the layers with salt and pepper to taste.
  6. 6. Carefully separate one egg into yolk and white.
  7. 7. Whisk the quark in a bowl with the egg yolk.
  8. 8. Add some salt, pepper, and milk to the quark mixture.
  9. 9. Finely chop the herbs.
  10. 10. Stir the chopped herbs into the quark mixture.
  11. 11. Whip the egg white in a clean bowl until stiff peaks form.
  12. 12. Gently fold the whipped egg white into the quark mixture.
  13. 13. Spread the finished quark mixture evenly over the vegetables in the dish.
  14. 14. Preheat the oven to 150 degrees Celsius.
  15. 15. Place the gratin in the oven for about 50 minutes.
  16. 16. Cover the dish with aluminum foil if it starts to brown too much.
  17. 17. Sprinkle pumpkin seeds over the top about 5 minutes before the end of the baking time.
  18. 18. Finish baking until golden brown and done.
