🍽️ Kohlrabi Gratin with Herb Quark

Ingredients
- 1 Kohlrabi
- 400 g Potatoes
- 2 Carrots
- Iodized salt
- white pepper
- Nutmeg
- 1 Egg
- 200 g Low-fat quark
- 4 tbsp low-fat milk
- fresh herbs (e.g. parsley, chervil, basil)
- 2 tbsp Pumpkin seeds
Instructions
- 1. Wash the kohlrabi, potatoes, and carrots thoroughly.
- 2. Remove tough skins and peel the vegetables.
- 3. Slice everything into thin, even rounds.
- 4. Place the sliced vegetables into a baking dish.
- 5. Season the layers with salt and pepper to taste.
- 6. Carefully separate one egg into yolk and white.
- 7. Whisk the quark in a bowl with the egg yolk.
- 8. Add some salt, pepper, and milk to the quark mixture.
- 9. Finely chop the herbs.
- 10. Stir the chopped herbs into the quark mixture.
- 11. Whip the egg white in a clean bowl until stiff peaks form.
- 12. Gently fold the whipped egg white into the quark mixture.
- 13. Spread the finished quark mixture evenly over the vegetables in the dish.
- 14. Preheat the oven to 150 degrees Celsius.
- 15. Place the gratin in the oven for about 50 minutes.
- 16. Cover the dish with aluminum foil if it starts to brown too much.
- 17. Sprinkle pumpkin seeds over the top about 5 minutes before the end of the baking time.
- 18. Finish baking until golden brown and done.
