🍽️ Crispy Chicken with Colorful Vegetable Mix

Ingredients
- 2 chicken breast fillets (à 120 g)
- 1 tbsp cornstarch
- salt
- pepper (from the mill)
- 1 piece fresh ginger (5 cm)
- 1 garlic clove
- 2 broccoli
- 0.5 red cabbage
- 3 spring onions
- 3 tbsp ghee (clarified butter, alternatively ghee)
- 8 baby corn (from the jar)
Instructions
- 1. Rinse the chicken breast fillets under running water and pat them dry with a kitchen towel.
- 2. Cut the fillets crosswise into slices about 2 cm thick.
- 3. Press the meat slices flat with the palm of your hand.
- 4. Season the meat with salt and pepper.
- 5. Dust the slices with cornstarch.
- 6. Press the starch lightly into the meat.
- 7. Heat 1 tablespoon of ghee in a pan.
- 8. Fry the chicken slices on both sides until golden brown.
- 9. Remove the chicken slices from the pan and keep them warm.
- 10. Remove the outer leaves from the red cabbage and cut it into thin strips.
- 11. Wash the broccoli and divide it into small florets.
- 12. Cut the tenderer parts of the broccoli stalk into small pieces.
- 13. Wash the spring onions and slice them into rings.
- 14. Drain the corn from the can or pod.
- 15. Peel the garlic and the ginger root.
- 16. Blanch the broccoli florets and stalk pieces in plenty of salted water for 2 minutes. (Blanchieren means to briefly cook in boiling water).
- 17. Remove the broccoli from the water and let it drain.
- 18. Blanch the red cabbage strips in salted water for 3 minutes.
- 19. Remove the red cabbage from the water and let it drain.
- 20. Grate the ginger and garlic finely.
- 21. Collect the juice that forms while grating.
- 22. Heat 2 tablespoons of ghee in a pan.
- 23. Sauté the spring onion rings briefly.
- 24. Add the prepared vegetables (red cabbage, broccoli, corn, onions) to the pan.
- 25. Add the grated garlic and ginger along with the juice.
- 26. Fry the vegetables briefly until they are warm and aromatic.
- 27. Arrange the vegetables and chicken slices in small bowls.
- 28. Serve the dish immediately.
