🍽️ Hearty Cabbage Dish with Mushrooms and Apricots

Ingredients
- 2 Onions
- 1 White Cabbage (ca. 750 g)
- 80 g dried Apricots
- 2 tbsp Olive Oil
- 0.5 tsp Cumin
- Salt
- Pepper (from the mill)
- 500 g Oyster Mushrooms
- 2 tsp Herbs of Provence
- 3 Apples
- 2 tbsp Apple Cider Vinegar
- 2 tbsp Sunflower Seeds
- 2 tsp Light Mustard Seeds
- 2 tbsp Chives
Instructions
- 1. Peel the onions.
- 2. Finely chop the onions.
- 3. Remove the outer leaves from the white cabbage.
- 4. Wash the white cabbage thoroughly.
- 5. Cut the white cabbage lengthwise into quarters.
- 6. Remove the hard core from the white cabbage.
- 7. Cut the white cabbage into small diamond shapes.
- 8. Cut the apricots into thin strips.
- 9. Heat 1 tablespoon of oil in a large pan.
- 10. Sauté the onions until translucent.
- 11. Add the cut cabbage to the pan.
- 12. Fry the cabbage for a few minutes while shaking the pan.
- 13. Stir in the apricot strips.
- 14. Add cumin, salt, and pepper.
- 15. Cover the pan.
- 16. Let the vegetables cook on low heat for 3 minutes.
- 17. Wash the oyster mushrooms.
- 18. Clean the oyster mushrooms.
- 19. Season the mushrooms with salt, pepper, and Herbs de Provence.
- 20. Heat a grill pan.
- 21. Brush the grill pan with the remaining oil.
- 22. Grill the mushrooms on both sides for about 2 minutes.
- 23. Salt and pepper the grilled mushrooms.
- 24. Remove the mushrooms from the pan.
- 25. Keep the mushrooms warm.
- 26. Wash the apples.
- 27. Quarter the apples.
- 28. Remove the core of the apples.
- 29. Cut the apple pieces into small bits.
- 30. Add the apples to the cabbage in the pan.
- 31. Season the dish with apple cider vinegar.
- 32. Cover the pan again.
- 33. Let the vegetables cook for 2 to 3 minutes.
- 34. Season the dish to taste with salt and pepper.
- 35. Toast the sunflower seeds in a pan without fat.
- 36. Coarsely crush the mustard seeds in a mortar.
- 37. Plate the cabbage with the mushrooms.
- 38. Sprinkle the dish with the sunflower seeds.
- 39. Sprinkle the dish with the mustard seeds.
- 40. Serve the dish.
