🍽️ Oats with Colorful Vegetable Mix

Ingredients
- 100 g oats
- 400 g Romanesco
- 300 g broccoli
- 400 g cauliflower
- 2 tomatoes
- 0.5 bunch flat-leaf parsley
- fresh rosemary
- salt
- freshly ground pepper
- butter
Instructions
- 1. Place the oats in a pot.
- 2. Pour in half a liter of water.
- 3. Bring the water to a boil.
- 4. Cover the pot.
- 5. Cook the oats over low heat for 30 minutes.
- 6. Remove the pot from the heat.
- 7. Let the oats sit, covered, for another 30 minutes to absorb the liquid.
- 8. Drain the oats.
- 9. Wash the broccoli, romanesco, and cauliflower.
- 10. Divide the vegetables into small florets.
- 11. Bring salted water to a boil.
- 12. Blanch the vegetables in batches for 3 minutes each (cook briefly in boiling water).
- 13. Drain the vegetables.
- 14. Score the tomatoes in a cross shape.
- 15. Pour boiling water over the tomatoes.
- 16. Peel off the skin.
- 17. Cut the tomatoes in half.
- 18. Remove the core.
- 19. Dice the tomatoes.
- 20. Heat some butter in a pot.
- 21. Sauté the tomato cubes and the oats briefly.
- 22. Add the broccoli, romanesco, and cauliflower.
- 23. Season the dish generously with salt and pepper.
- 24. Chop the parsley just before serving.
- 25. Sprinkle the parsley over the vegetables along with the fresh rosemary.
