  5. 5. Cook the oats over low heat for 30 minutes.
  6. 6. Remove the pot from the heat.
  7. 7. Let the oats sit, covered, for another 30 minutes to absorb the liquid.
  8. 8. Drain the oats.
  9. 9. Wash the broccoli, romanesco, and cauliflower.
  10. 10. Divide the vegetables into small florets.
  11. 11. Bring salted water to a boil.
  12. 12. Blanch the vegetables in batches for 3 minutes each (cook briefly in boiling water).
  13. 13. Drain the vegetables.
  14. 14. Score the tomatoes in a cross shape.
  15. 15. Pour boiling water over the tomatoes.
  16. 16. Peel off the skin.
  17. 17. Cut the tomatoes in half.
  18. 18. Remove the core.
  19. 19. Dice the tomatoes.
  20. 20. Heat some butter in a pot.
  21. 21. Sauté the tomato cubes and the oats briefly.
  22. 22. Add the broccoli, romanesco, and cauliflower.
  23. 23. Season the dish generously with salt and pepper.
  24. 24. Chop the parsley just before serving.
  25. 25. Sprinkle the parsley over the vegetables along with the fresh rosemary.
