🍽️ Cabbage Rolls in Tomato Sauce

Ingredients
- 8 large Savoy cabbage leaves
- salt
- 2 onions
- 2 garlic cloves
- 10 g oregano (0.5 bunch)
- 2 tbsp olive oil
- 600 g ground beef
- 1 egg
- pepper
- 20 g tomato paste (approx. 1 tbsp)
- 100 ml meat broth
- 400 g strained tomatoes
- 1 pinch coconut blossom sugar
Instructions
- 1. Bring a pot of water and salt to a boil.
- 2. Submerge the savoy cabbage leaves in the boiling water for 3 to 4 minutes.
- 3. Remove the leaves from the water and rinse them immediately with cold water to stop the cooking process.
- 4. Pat the leaves dry with a kitchen towel.
- 5. Trim the thick leaf ribs to make the leaves easier to roll.
- 6. Peel one onion and one clove of garlic.
- 7. Dice the onion and garlic very finely.
- 8. Wash the oregano and shake it dry.
- 9. Chop the oregano leaves finely.
- 10. Heat one tablespoon of oil in a frying pan.
- 11. Sauté the onions and garlic over medium heat until they are translucent.
- 12. Transfer the sautéed onions and garlic into a bowl.
- 13. Add the minced meat, one egg, and the chopped oregano to the bowl.
- 14. Knead the ingredients into a uniform mixture.
- 15. Season the meat mixture with salt and pepper.
- 16. Place a savoy cabbage leaf flat on your work surface.
- 17. Place one to two tablespoons of the meat mixture in the center of the leaf.
- 18. Fold the sides of the leaf over the filling.
- 19. Roll the leaf tightly into a parcel.
- 20. Secure the parcel with kitchen twine.
- 21. Heat the remaining oil in a large pot or casserole dish.
- 22. Fry the cabbage rolls on all sides until golden brown over medium to high heat.
- 23. Remove the browned rolls from the pot and set them aside.
- 24. Peel the remaining onion.
- 25. Dice the onion finely.
- 26. Add the onion cubes to the pot.
- 27. Sauté the onions over medium heat until they are translucent.
- 28. Stir the tomato paste into the onions.
- 29. Deglaze the pot with the broth.
- 30. Stir the puréed tomatoes into the sauce.
- 31. Season the sauce with salt, coconut blossom sugar, and pepper.
- 32. Place the cabbage rolls back into the sauce.
- 33. Cover the pot.
- 34. Simmer the rolls over low heat for about 20 minutes.
- 35. Turn the rolls once during cooking.
- 36. Taste the sauce and adjust seasoning with salt and pepper before serving.
