🍲 Irish Cabbage and Potato Stew (Calcannon)

Ingredients
- 600 g floury potatoes
- salt
- 400 g savoy cabbage
- 150 g breakfast bacon (in slices)
- 60 g butter
- 150 ml warm milk
- pepper (from the mill)
- nutmeg
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Cut the potatoes into four equal quarters.
- 3. Bring a large pot of water and salt to a boil.
- 4. Add the potato pieces to the boiling salted water.
- 5. Cook the potatoes for about 30 minutes until they are tender.
- 6. Drain the cooking water from the potatoes.
- 7. Mash the warm potatoes into a puree using a potato masher.
- 8. Let the potato mash steam briefly to dry out slightly.
- 9. Wash the cabbage under running water.
- 10. Remove the hard cores and any wilted leaves from the cabbage.
- 11. Cut the cabbage into thin strips.
- 12. Bring a new pot of salted water to a boil.
- 13. Add the cabbage strips to the boiling water.
- 14. Blanch the cabbage for about 10 minutes (cook briefly in boiling water).
- 15. Remove the cabbage from the water using a slotted spoon.
- 16. Let the cooked cabbage drain in a colander.
- 17. Cut the bacon into thin strips.
- 18. Take a large pot and add half of the butter to it.
- 19. Melt the butter over medium heat.
- 20. Add the bacon strips to the melted butter.
- 21. Sauté the bacon until it is slightly crispy.
- 22. Add the drained cabbage to the bacon in the pot.
- 23. Add the prepared potato mash to the cabbage and bacon mixture.
- 24. Add the remaining butter to the pot.
- 25. Mix everything well together until it forms a homogeneous mass.
- 26. Add warm milk gradually.
- 27. Stir continuously until the mixture has a creamy consistency.
- 28. Season the stew with salt to taste.
- 29. Season the stew with freshly ground pepper.
- 30. Season the stew with a pinch of ground nutmeg.
- 31. Fill the finished stew into small bowls.
- 32. Serve the dish warm.
