🍽️ Spiced Meatballs with Yogurt Dip and Couscous Salad

Ingredients
- 150 g Couscous (instant)
- 2 red bell peppers
- 2 tomatoes
- 1 handful flat-leaf parsley
- 1 handful mint
- 0.5 lemon juice
- 30 ml olive oil

- 2 garlic cloves
- 1 onion
- 1 handful flat-leaf parsley
- 800 g minced meat (pork)
- 1 tsp cumin powder
- 1 egg
- breadcrumbs (as needed)

- 300 g Greek yogurt
- salt
- 0.5 tsp crumbled oregano
- 2 pinches sweet paprika powder
- 1 pinch chili flakes

Instructions
- 1. Pour the couscous into lukewarm water and let it swell for about 10 minutes.
- 2. Drain the soaked couscous in a fine sieve.
- 3. Thoroughly wash the bell peppers.
- 4. Halve the bell peppers and remove the inner seeds and membranes.
- 5. Cut the bell peppers into very small cubes.
- 6. Thoroughly wash the tomatoes.
- 7. Halve the tomatoes.
- 8. Cut the tomatoes into small cubes as well.
- 9. Wash the fresh herbs.
- 10. Shake the herbs dry.
- 11. Pick the leaves off the stems.
- 12. Chop the herb leaves finely.
- 13. Add the couscous, peppers, tomatoes, and herbs to a bowl.
- 14. Dress the mixture with lemon juice.
- 15. Add olive oil.
- 16. Season the salad with salt and pepper to taste.
- 17. Peel the garlic cloves.
- 18. Peel the onion.
- 19. Finely dice the garlic and onion.
- 20. Rinse the parsley.
- 21. Shake the parsley dry.
- 22. Pick the parsley leaves off the stems.
- 23. Finely chop the parsley leaves.
- 24. Place the minced meat in a large bowl.
- 25. Add the diced garlic.
- 26. Add the diced onion.
- 27. Add the chopped parsley.
- 28. Sprinkle cumin over the mixture.
- 29. Add the egg.
- 30. Knead the meat mixture thoroughly.
- 31. Check the consistency of the meat mixture.
- 32. If necessary, add breadcrumbs.
- 33. Work in the breadcrumbs until the mixture is easy to shape.
- 34. Season the meat mixture with salt.
- 35. Season the meat mixture with pepper.
- 36. Form small balls from the meat mixture.
- 37. Thread the meatballs onto skewers.
- 38. Press the meatballs firmly onto the skewers.
- 39. Shape the balls slightly into an elongated form.
- 40. Brush the meatballs with oil.
- 41. Heat a pan thoroughly.
- 42. Fry the meatballs in the hot pan.
- 43. Fry the meatballs on all sides.
- 44. Fry the meatballs for 6 to 8 minutes.
- 45. Take the yogurt for the dip.
- 46. Season the yogurt with salt.
- 47. Distribute the yogurt into small bowls.
- 48. Sprinkle the spices over the yogurt.
- 49. Take a toothpick.
- 50. Stir the spices decoratively into the yogurt.
- 51. Plate the couscous salad in bowls.
- 52. Take large plates or platters.
- 53. Distribute the couscous salad onto the plates.
- 54. Add the meatballs.
- 55. Add the yogurt dip.
- 56. Cut lemons into wedges.
- 57. Garnish the plates with lemon wedges.
- 58. Garnish the plates with mint.
