🍽️ Spiced Köfte with Fresh Bulgur Salad

Ingredients
- 1 clove garlic
- 1 onion
- 1 handful parsley
- 800 g lamb mince
- ground cumin
- 1 egg
- breadcrumbs (as needed)
- 2 tbsp olive oil (for brushing)
- pepper (from the mill)
Instructions
- 1. Bring the broth to a boil in a pot.
- 2. Stir the bulgur into the hot broth.
- 3. Remove the pot from the heat.
- 4. Let the bulgur swell for about 30 minutes (or cook according to package instructions).
- 5. Wash the tomatoes and remove the hard stem ends.
- 6. Dice the tomatoes into small cubes.
- 7. Wash and clean the spring onions.
- 8. Slice the spring onions into fine rings.
- 9. Wash the parsley and shake it dry.
- 10. Pluck the parsley leaves from the stems.
- 11. Finely chop the parsley leaves.
- 12. Toss the tomatoes, spring onions, and parsley with lemon juice, olive oil, salt, and pepper.
- 13. Fold the vegetable mixture into the cooled bulgur.
- 14. Let the salad marinate for about 20 minutes.
- 15. Season the salad to taste with salt and pepper.
- 16. Peel the garlic clove(s) and onion.
- 17. Finely chop the garlic and onion.
- 18. Rinse the parsley and shake it dry.
- 19. Pluck the parsley leaves from the stems.
- 20. Finely chop the parsley leaves.
- 21. Mix the minced meat with chopped garlic, onions, parsley, cumin, and egg.
- 22. Add breadcrumbs if necessary until the mixture is moldable.
- 23. Season the köfte mixture with salt and pepper.
- 24. Form small balls from the mixture.
- 25. Thread the balls onto skewers.
- 26. Press the meat firmly onto the skewers.
- 27. Shape the köfte into a slightly elongated form.
- 28. Brush the köfte with oil.
- 29. Heat a pan until very hot.
- 30. Fry the köfte all around for about 6 to 8 minutes.
- 31. Plate the bulgur salad.
- 32. Place the köfte on top of the salad.
- 33. Garnish with arugula and grated carrots if desired.
- 34. Serve with yogurt dip.
