🍽️ Crispy Pork in Sweet and Sour Sauce

Ingredients
- 250 g Basmati rice
- salt
- 1 piece fresh ginger (approx. 1,5 cm)
- 1 clove garlic
- 200 ml pineapple juice
- 1 tbsp tomato paste
- 1 tbsp ketchup
- 0.5 mango
- 2 tbsp white wine vinegar
- 1 tbsp lemon juice
- 3 tbsp sugar
- 2 tbsp dark soy sauce
- 1 tbsp sunflower oil
- 1 tbsp cornstarch
- chili sauce
- rice wine
- peanut oil (for frying)
- 2 eggs
- 200 ml dry white wine
- 250 g flour
- 1 tsp salt
- 600 g pork tenderloin (ready for cooking)
- salt
- pepper (from the mill)
- 2 spring onions
Instructions
- 1. Cook the rice in salted water.
- 2. Peel the ginger and the garlic.
- 3. Dice the ginger and the garlic finely.
- 4. Mix the juice with tomato paste.
- 5. Add tomato ketchup to the mixture.
- 6. Add pureed mango pulp.
- 7. Add vinegar to the mixture.
- 8. Add lemon juice to the mixture.
- 9. Add sugar to the mixture.
- 10. Add soy sauce to the mixture.
- 11. Stir the sauce base well.
- 12. Heat the oil in a small pot.
- 13. Sauté the ginger and garlic in the hot oil.
- 14. Pour the mixed liquid over the spices.
- 15. Bring the sauce to a boil.
- 16. Mix the starch flour with a little cold water.
- 17. Pour the starch mixture into the sauce.
- 18. Thicken the sauce with it.
- 19. Season the sauce with chili sauce.
- 20. Season the sauce with rice wine.
- 21. Let the sauce cool down.
- 22. Heat peanut oil in a high pot or a deep fryer.
- 23. Use enough oil so that the meat can float in it.
- 24. Lightly beat the eggs.
- 25. Add the wine to the eggs.
- 26. Stir the flour well into the egg mixture.
- 27. Add salt to the batter mixture.
- 28. Make sure the batter is thick.
- 29. Add a little more water to the batter if needed.
- 30. Wash the pork.
- 31. Pat the meat dry.
- 32. Remove unwanted parts from the meat (trim).
- 33. Cut the meat into approx. 3 cm pieces.
- 34. Season the meat pieces.
- 35. Dip the meat pieces into the batter.
- 36. Fry the meat pieces in hot fat until golden brown.
- 37. Fry them all around.
- 38. Takes approx. 5-7 minutes.
- 39. Clean the spring onions.
- 40. Slice the spring onions diagonally.
- 41. Let the meat drain briefly on kitchen paper.
- 42. Sprinkle the meat with the spring onions.
- 43. Plate the meat.
- 44. Serve the dish with the sweet and sour sauce.
- 45. Serve the dish with the rice.
