  1. 1. Wash the plums thoroughly.
  2. 2. Halve the plums and remove the pits.
  3. 3. Cut the plum halves into thin wedges.
  4. 4. Put the apple juice, two tablespoons of honey, and the cinnamon stick into a pot.
  5. 5. Bring the mixture in the pot to a boil.
  6. 6. Let the liquid reduce for a short time.
  7. 7. Add the prepared plum wedges to the pot.
  8. 8. Simmer the plums over low heat for two to three minutes.
  9. 9. Drain the plums through a sieve.
  10. 10. Catch the draining juice in a bowl.
  11. 11. Put low-fat quark, yogurt, and the remaining honey into a bowl.
  12. 12. Beat the quark mixture until creamy using the beaters of a hand mixer.
  13. 13. Put the cream into a tall container.
  14. 14. Whip the cream until stiff.
  15. 15. Gently fold the whipped cream into the quark-yogurt mixture.
  16. 16. Break the zwieback (dry rusks) into small pieces.
  17. 17. Soak the zwieback pieces in the collected plum juice.
  18. 18. Layer the soaked zwieback pieces, the plums, and the quark cream alternately in a small baking dish or in four glasses.
  19. 19. Place the dessert in the refrigerator for at least 25 to 30 minutes.
  20. 20. Let the dessert chill and set.
