🍳 Crispy Buttermilk Bread

Ingredients
- 100 g muesli
- 250 ml buttermilk
- 300 g wheat flour Type 1050
- 150 g semolina
- 1 packet baking powder
- nutmeg
- 600 g bananas (4 small, ripe bananas)
- 0.5 lime
- 80 g honey
Instructions
- 1. Stir the muesli and buttermilk together in a bowl.
- 2. Let the mixture soak for about 10 minutes.
- 3. Mix flour, semolina, and baking powder in a second bowl.
- 4. Grate a pinch of nutmeg directly into the flour mixture.
- 5. Peel the bananas and mash them with a fork.
- 6. Squeeze half of the lime.
- 7. Add the banana puree, honey, one tablespoon of lime juice, and the muesli buttermilk mixture to the flour mixture.
- 8. Knead everything into a moist dough using the dough hooks of a hand mixer.
- 9. Pour the dough into a loaf pan (30 cm long) lined with baking paper.
- 10. Preheat the oven to 200 °C (convection: 180 °C, gas: setting 3).
- 11. Bake the bread on the rack for about 40 minutes.
