  1. 1. Stir the muesli and buttermilk together in a bowl.
  2. 2. Let the mixture soak for about 10 minutes.
  3. 3. Mix flour, semolina, and baking powder in a second bowl.
  4. 4. Grate a pinch of nutmeg directly into the flour mixture.
  5. 5. Peel the bananas and mash them with a fork.
  6. 6. Squeeze half of the lime.
  7. 7. Add the banana puree, honey, one tablespoon of lime juice, and the muesli buttermilk mixture to the flour mixture.
  8. 8. Knead everything into a moist dough using the dough hooks of a hand mixer.
  9. 9. Pour the dough into a loaf pan (30 cm long) lined with baking paper.
  10. 10. Preheat the oven to 200 °C (convection: 180 °C, gas: setting 3).
  11. 11. Bake the bread on the rack for about 40 minutes.
