🍽️ Crispy Onion Tart

Ingredients
- 21 g cube yeast (0.5 cube yeast)
- 5 g liquid honey (1 tsp)
- 200 g whole wheat flour
- 0.5 tsp salt
- 2 tbsp olive oil
- 350 g green seedless grapes
- 250 g blue grapes
- some flour (for working)
- 300 g onions (6 onions)
- 3 sprigs rosemary
- 200 g feta cheese
Instructions
- 1. Pour 125 milliliters of lukewarm water into a small bowl.
- 2. Crumble the yeast into the water.
- 3. Add the honey.
- 4. Stir the mixture until smooth.
- 5. Put the flour into a large mixing bowl.
- 6. Add the salt.
- 7. Add the olive oil.
- 8. Add the yeast mixture.
- 9. Knead everything into a smooth dough using the dough hooks of a hand mixer.
- 10. Cover the dough.
- 11. Let the dough rise for about 40 minutes in a warm place.
- 12. Wait until the dough volume has doubled.
- 13. Thoroughly wash the green and blue grapes under warm water.
- 14. Let the grapes drain well in a sieve.
- 15. Halve the blue grapes.
- 16. Remove the seeds from the halved blue grapes.
- 17. Knead the yeast dough vigorously again.
- 18. Dust the work surface with a little flour.
- 19. Roll out the dough with a rolling pin to baking sheet size (approx. 30 x 40 cm).
- 20. Wrap the dough around the rolling pin.
- 21. Line a baking sheet with baking paper.
- 22. Unroll the dough on the baking sheet.
- 23. Place a second baking sheet on top as a lid.
- 24. Ensure the dough can rise underneath.
- 25. Let the dough rise for 20 minutes.
- 26. Peel the onions.
- 27. Halve the onions.
- 28. Cut the onions into thin rings.
- 29. Rinse the rosemary.
- 30. Shake the rosemary dry.
- 31. Pluck the rosemary needles off.
- 32. Distribute the onions on the dough.
- 33. Distribute the grapes on the dough.
- 34. Distribute the rosemary on the dough.
- 35. Drain the feta cheese.
- 36. Crumble the feta cheese over the dough.
- 37. Preheat the oven to 200 °C (convection: 180 °C, gas: setting 3).
- 38. Bake the tart in the preheated oven for about 35 minutes.
- 39. Cut the warm tart into pieces.
- 40. Serve the tart.
