🍽️ Crispy Flammkuchen with Shrimp and Wasabi

Ingredients
- 200 g Leek (1 stalk)
- 5 tbsp Rapeseed oil
- 120 g Deep-sea shrimp
- 200 g Sour cream
- 1 tsp Wasabi paste
- 400 g Whole wheat flour
- Salt
- Pepper
Instructions
- 1. Thoroughly wash the leek.
- 2. Remove the tough ends and slice the leek into thin rings.
- 3. Heat one tablespoon of oil in a frying pan.
- 4. Add the leek rings to the pan.
- 5. Fry the leek for about three minutes.
- 6. Remove the leek from the pan and set it aside.
- 7. Place the shrimp in a colander.
- 8. Rinse the shrimp under cold water.
- 9. Let the shrimp drain well.
- 10. Mix the sour cream with the wasabi in a small bowl.
- 11. Put the flour into a large bowl.
- 12. Add the remaining four tablespoons of oil.
- 13. Pour 250 milliliters of water into the bowl.
- 14. Add half a teaspoon of salt.
- 15. Process the ingredients using the dough hooks of the hand mixer.
- 16. Knead the dough until it is smooth.
- 17. Place the dough on a lightly floured work surface.
- 18. Divide the dough into four equal portions.
- 19. Take one portion of the dough.
- 20. Roll the portion into a thin, elongated flatbread.
- 21. The flatbread should be about 25 centimeters long and 15 centimeters wide.
- 22. Place two dough flatbreads on a sheet of baking paper.
- 23. The baking paper sheet should be the size of your baking tray.
- 24. Pull the baking paper with the dough onto the baking tray.
- 25. Spread the wasabi-cream mixture over each flatbread.
- 26. Distribute the prepared leek over the flatbread.
- 27. Place the shrimp on the flatbread.
- 28. Season the toppings with salt and pepper.
- 29. Preheat the oven.
- 30. Set the temperature to 225 degrees Celsius.
- 31. If you use convection, set 200 degrees Celsius.
- 32. If you use gas, set level 3 to 4.
- 33. Slide the baking tray onto the lowest rack.
- 34. Bake the flammkuchen for about 12 minutes.
- 35. Remove the baking tray from the oven.
- 36. Pull the baked flammkuchen off the tray along with the baking paper.
- 37. Place the baking paper with the remaining raw dough flatbreads back onto the tray.
- 38. Top the new flammkuchen as well.
- 39. Bake the second batch for 12 minutes as well.
