  2. 2. Remove the tough ends and slice the leek into thin rings.
  3. 3. Heat one tablespoon of oil in a frying pan.
  4. 4. Add the leek rings to the pan.
  5. 5. Fry the leek for about three minutes.
  6. 6. Remove the leek from the pan and set it aside.
  7. 7. Place the shrimp in a colander.
  8. 8. Rinse the shrimp under cold water.
  9. 9. Let the shrimp drain well.
  10. 10. Mix the sour cream with the wasabi in a small bowl.
  11. 11. Put the flour into a large bowl.
  12. 12. Add the remaining four tablespoons of oil.
  13. 13. Pour 250 milliliters of water into the bowl.
  14. 14. Add half a teaspoon of salt.
  15. 15. Process the ingredients using the dough hooks of the hand mixer.
  16. 16. Knead the dough until it is smooth.
  17. 17. Place the dough on a lightly floured work surface.
  18. 18. Divide the dough into four equal portions.
  19. 19. Take one portion of the dough.
  20. 20. Roll the portion into a thin, elongated flatbread.
  21. 21. The flatbread should be about 25 centimeters long and 15 centimeters wide.
  22. 22. Place two dough flatbreads on a sheet of baking paper.
  23. 23. The baking paper sheet should be the size of your baking tray.
  24. 24. Pull the baking paper with the dough onto the baking tray.
  25. 25. Spread the wasabi-cream mixture over each flatbread.
  26. 26. Distribute the prepared leek over the flatbread.
  27. 27. Place the shrimp on the flatbread.
  28. 28. Season the toppings with salt and pepper.
  29. 29. Preheat the oven.
  30. 30. Set the temperature to 225 degrees Celsius.
  31. 31. If you use convection, set 200 degrees Celsius.
  32. 32. If you use gas, set level 3 to 4.
  33. 33. Slide the baking tray onto the lowest rack.
  34. 34. Bake the flammkuchen for about 12 minutes.
  35. 35. Remove the baking tray from the oven.
  36. 36. Pull the baked flammkuchen off the tray along with the baking paper.
  37. 37. Place the baking paper with the remaining raw dough flatbreads back onto the tray.
  38. 38. Top the new flammkuchen as well.
  39. 39. Bake the second batch for 12 minutes as well.
