🍽️ Crispy Wholemeal Pizza with Pumpkin and White Sausage

Ingredients
- 1 clove garlic
- 250 g pureed tomatoes
- salt
- pepper (from the mill)
- 2 handfuls wild garlic
- 4 large mushrooms
- 200 g pumpkin flesh (e.g. butternut)
- 200 g white sausage
- 1 red onion
- 2 sprigs oregano
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Stir the yeast smoothly with the sugar and 175 milliliters of lukewarm water.
- 3. Add the wholemeal flour, flaxseeds, 2 tablespoons of oil, and salt.
- 4. Knead everything into a smooth dough.
- 5. Adjust the amount of flour if necessary.
- 6. Let the dough rise, covered, in a warm place for about 30 minutes.
- 7. Preheat the oven with two baking sheets to 220 degrees Celsius fan mode.
- 8. Peel the garlic.
- 9. Press the garlic into a bowl with the tomatoes.
- 10. Season the tomatoes with salt and pepper.
- 11. Rinse the wild garlic and shake it dry.
- 12. Strip the wild garlic leaves from the stems.
- 13. Roughly tear up the wild garlic leaves.
- 14. Clean the mushrooms.
- 15. Slice the mushrooms.
- 16. Dice the pumpkin finely.
- 17. Peel the white sausage.
- 18. Slice the white sausage thinly.
- 19. Peel the onion.
- 20. Dice the onion finely.
- 21. Knead the dough well again on a floured work surface.
- 22. Divide the dough into 4 portions.
- 23. Roll each portion into a thin pizza.
- 24. Place the pizzas on baking paper.
- 25. Spread the tomato sauce over the pizzas.
- 26. Leave a narrow border free.
- 27. Top the pizzas with the wild garlic.
- 28. Top the pizzas with the mushrooms.
- 29. Top the pizzas with the pumpkin.
- 30. Top the pizzas with the sausage.
- 31. Sprinkle the onions over them.
- 32. Salt and pepper the pizzas.
- 33. Drizzle the remaining oil over the pizzas.
- 34. Carefully slide the pizzas onto the hot baking sheets with the paper.
- 35. Bake the pizzas in the oven for 15 to 20 minutes until golden brown.
- 36. Take the pizzas out of the oven.
- 37. Sprinkle the pizzas with picked oregano.
- 38. Serve the pizzas.
