🍽️ Crispy Kohlrabi Sticks

Ingredients
- 600 g small kohlrabi (4 small kohlrabi)
- salt
- 200 g low-fat quark
- 3 tbsp mineral water (with carbonation)
- 0.5 lemon
- 4 sprigs tarragon
- 1 cane sugar
- pepper
- 3 egg yolks
- 6 tbsp breadcrumbs
- 4 tbsp sesame seeds
- 4 tbsp spelt flour
- 2 tbsp rapeseed oil
Instructions
- 1. Peel the kohlrabi thoroughly.
- 2. Cut the kohlrabi into slices about 1.5 cm thick.
- 3. Cut the slices into sticks about 1.5 cm thick.
- 4. Bring water to a boil and add some salt.
- 5. Cook the kohlrabi sticks in the salted water for 2 to 3 minutes.
- 6. Lift the sticks out of the water with a slotted spoon.
- 7. Immediately dip the sticks into a bowl of cold water.
- 8. Remove the sticks from the cold water.
- 9. Let the sticks drain.
- 10. Place the sticks on kitchen paper.
- 11. Put quark and mineral water into a bowl.
- 12. Stir the quark mixture until smooth.
- 13. Squeeze a lemon.
- 14. Wash the tarragon.
- 15. Shake the tarragon dry.
- 16. Pluck the tarragon leaves from the stems.
- 17. Finely chop the tarragon leaves.
- 18. Stir the chopped tarragon into the quark.
- 19. Add some lemon juice to the quark mixture.
- 20. Add 1 pinch of sugar to the quark mixture.
- 21. Season the quark mixture with salt.
- 22. Season the quark mixture with pepper.
- 23. Separate the eggs.
- 24. Put the egg yolks into a deep plate.
- 25. Whisk the egg yolks with a fork.
- 26. Use the egg whites for something else.
- 27. Put breadcrumbs into a deep plate.
- 28. Add sesame seeds to the plate with the breadcrumbs.
- 29. Mix the breadcrumbs and sesame seeds.
- 30. Put flour into a third deep plate.
- 31. Coat the kohlrabi sticks in the flour.
- 32. Shake off excess flour from the sticks.
- 33. Roll the sticks in the whisked egg.
- 34. Roll the sticks in the sesame mixture.
- 35. Heat rapeseed oil in a non-stick pan.
- 36. Fry the kohlrabi sticks in batches in the pan.
- 37. Fry the sticks over medium heat.
- 38. Fry the sticks for about 4 minutes.
- 39. Fry the sticks until golden brown on all sides.
- 40. Serve the kohlrabi sticks with the tarragon quark.
