  3. 3. Cut the slices into sticks about 1.5 cm thick.
  4. 4. Bring water to a boil and add some salt.
  5. 5. Cook the kohlrabi sticks in the salted water for 2 to 3 minutes.
  6. 6. Lift the sticks out of the water with a slotted spoon.
  7. 7. Immediately dip the sticks into a bowl of cold water.
  8. 8. Remove the sticks from the cold water.
  9. 9. Let the sticks drain.
  10. 10. Place the sticks on kitchen paper.
  11. 11. Put quark and mineral water into a bowl.
  12. 12. Stir the quark mixture until smooth.
  13. 13. Squeeze a lemon.
  14. 14. Wash the tarragon.
  15. 15. Shake the tarragon dry.
  16. 16. Pluck the tarragon leaves from the stems.
  17. 17. Finely chop the tarragon leaves.
  18. 18. Stir the chopped tarragon into the quark.
  19. 19. Add some lemon juice to the quark mixture.

  37. 37. Fry the sticks over medium heat.
  38. 38. Fry the sticks for about 4 minutes.
  39. 39. Fry the sticks until golden brown on all sides.
  40. 40. Serve the kohlrabi sticks with the tarragon quark.
