  1. 1. Finely chop the pepperoni.
  2. 2. Crumble the feta cheese finely.
  3. 3. Mix the cheese with the herbs, pepperoni, and eggs.
  4. 4. Season the mixture with salt, pepper, and paprika powder.
  5. 5. Place two pastry sheets on top of each other.
  6. 6. Cut the stack into eight equal parts.
  7. 7. Cut each eighth into triangles.
  8. 8. Place some cheese filling on the wide side of a triangle.
  9. 9. Fold the two outer corners of the wide side inward.
  10. 10. Roll the triangle from the wide side towards the tip.
  11. 11. Heat the oil in a pan.
  12. 12. Check the heat by holding a wooden cooking spoon in the oil.
  13. 13. The oil is ready when small bubbles rise from the wood.
  14. 14. Fry the rolls in batches for approx. 3 minutes until golden brown.
  15. 15. Let the rolls drain on kitchen paper.
  16. 16. Serve the rolls garnished with mint.
