🍽️ Crispy Cheese Rolls

Ingredients
- 2 pickled green chili peppers
- 400 g feta
- 1 tbsp chopped dill tips
- 2 tbsp chopped parsley
- 1 tbsp chopped mint
- 2 eggs
- salt
- pepper (from the mill)
- 0.5 tsp paprika powder
- 4 sheets yufka dough (Turkish grocery store)
- 500 ml oil (for frying)
- mint (for garnish)
Instructions
- 1. Finely chop the pepperoni.
- 2. Crumble the feta cheese finely.
- 3. Mix the cheese with the herbs, pepperoni, and eggs.
- 4. Season the mixture with salt, pepper, and paprika powder.
- 5. Place two pastry sheets on top of each other.
- 6. Cut the stack into eight equal parts.
- 7. Cut each eighth into triangles.
- 8. Place some cheese filling on the wide side of a triangle.
- 9. Fold the two outer corners of the wide side inward.
- 10. Roll the triangle from the wide side towards the tip.
- 11. Heat the oil in a pan.
- 12. Check the heat by holding a wooden cooking spoon in the oil.
- 13. The oil is ready when small bubbles rise from the wood.
- 14. Fry the rolls in batches for approx. 3 minutes until golden brown.
- 15. Let the rolls drain on kitchen paper.
- 16. Serve the rolls garnished with mint.
