  1. 1. Rinse the chicken wings under cold running water.
  2. 2. Pat the wings dry thoroughly with kitchen paper.
  3. 3. Separate the small wing tips and discard them.
  4. 4. Break the middle wing sections apart at the joints.
  5. 5. Poke the meat in several places with a fork.
  6. 6. Mix one tablespoon of soy sauce with sherry in a bowl.
  7. 7. Place the wings in the marinade and let them sit for 15 minutes.
  8. 8. Toast the peeled sesame seeds in a dry pan.
  9. 9. Toast the black sesame seeds separately in a dry pan.
  10. 10. Place the two types of sesame seeds onto separate shallow plates.
  11. 11. Add the remaining soy sauce, sugar, honey, vegetable broth, and star anise to a pot.
  12. 12. Bring the sauce to a boil.
  13. 13. Let the sauce reduce by about half.
  14. 14. Remove the wings from the marinade and pat them dry.
  15. 15. Heat oil in a non-stick pan.
  16. 16. Fry the wings in batches over medium heat until golden brown.
  17. 17. Cook them for 10 to 12 minutes, turning them on all sides.
  18. 18. Brush the fried wings with the prepared seasoning sauce.
  19. 19. Press half of the wings into the peeled sesame seeds.
  20. 20. Press the other half of the wings into the black sesame seeds.
  21. 21. Cut a lime into wedges.
  22. 22. Serve the wings with the lime wedges.
