🍽️ Crispy Bread Croutons in Olive Oil

Ingredients
- 1 egg
- 80 ml milk (1.5% fat)
- salt
- pepper
- 2 slices whole wheat sandwich bread
- 400 g zucchini (2 zucchini)
- 250 g cherry tomatoes
- 2 tbsp olive oil
- to taste coarse pepper
Instructions
- 1. Whisk the egg and milk together in a bowl.
- 2. Season the egg mixture with salt and pepper.
- 3. Pour the egg mixture into a shallow dish.
- 4. Cut the bread slices diagonally in half.
- 5. Place the bread slices into the egg mixture.
- 6. Turn the slices until they have fully absorbed the liquid.
- 7. Wash the zucchini thoroughly.
- 8. Remove the tough ends of the zucchini.
- 9. Cut the zucchini in half lengthwise.
- 10. Slice the zucchini halves into about 1 cm thick slices.
- 11. Wash the tomatoes.
- 12. Halve half of the tomatoes.
- 13. Heat 1 tablespoon of olive oil in a large non-stick pan.
- 14. Place the soaked bread croutons into the hot pan.
- 15. Fry the bread croutons over low heat for about 3 minutes on each side until golden brown.
- 16. Heat the remaining olive oil in a wide pot.
- 17. Add the zucchini and all tomatoes to the pot.
- 18. Simmer the vegetables covered over medium heat for about 6 minutes.
- 19. Season the vegetables with salt and pepper to taste.
- 20. Plate the fried bread croutons and vegetables.
- 21. Sprinkle the dish with coarse pepper if desired.
