🍽️ Crispy Schnitzel Wraps with Fresh Guacamole

Ingredients
- 2 Avocados
- 1 Lime (juice)
- 1 Tomato
- Salt
- Pepper (from the mill)
- 4 Lettuce leaves
- 1 Handful Cilantro
- 1 large red Chili pepper
- 4 thin Pork schnitzels (approx. 150 g each)
- 2 tbsp Cornstarch
- 1 Egg
- 4 tbsp Panko breadcrumbs (or regular breadcrumbs)
- 4 tbsp Coconut flakes
- 4 tbsp Corn germ oil
- 4 Wraps (ready-made)
- Lime wedges
Instructions
- 1. Cut the avocados in half lengthwise and remove the pits.
- 2. Scoop the flesh out of the skins into a bowl.
- 3. Add a little lime juice and mash the avocado with a fork or blend it.
- 4. Wash the tomato, cut it in half, and remove the seeds.
- 5. Remove the stem end and dice the flesh into very small pieces.
- 6. Add the diced tomatoes to the avocado mixture.
- 7. Season the guacamole with salt, pepper, and lime juice to taste.
- 8. Thoroughly wash the salad greens and the cilantro.
- 9. Shake the vegetables dry.
- 10. Rinse the chili pepper and slit it lengthwise.
- 11. Remove the seeds from the chili pepper.
- 12. Slice the chili pepper into thin rings.
- 13. Switch the oven to the grill function and preheat it.
- 14. Rinse the meat and pat it dry with a kitchen towel.
- 15. Season the meat with salt and pepper.
- 16. Coat the schnitzels in the cornstarch.
- 17. Shake off any excess flour well.
- 18. Whisk the egg in a shallow dish.
- 19. Mix the panko breadcrumbs with the coconut flakes.
- 20. Spread the breadcrumb mixture onto a plate.
- 21. Dip the schnitzels one by one into the beaten egg.
- 22. Coat the schnitzels in the panko-coconut mixture.
- 23. Press the breading on firmly.
- 24. Heat the oil in a frying pan.
- 25. Fry the schnitzels in the hot oil until golden brown.
- 26. Turn the schnitzels while frying.
- 27. Fry the schnitzels for 5 to 6 minutes.
- 28. Place the wraps under the hot grill.
- 29. Bake the wraps for 1 to 2 minutes per side.
- 30. Let the finished schnitzels rest for a short time.
- 31. Cut the schnitzels into strips.
- 32. Place 1 to 2 leaves of salad on each wrap.
- 33. Place the schnitzel strips on the salad.
- 34. Sprinkle the wraps with the chili rings.
- 35. Sprinkle the wraps with the cilantro.
- 36. Roll up the wraps as desired.
- 37. Serve the guacamole and lime wedges on the side.
