🍰 Crunchy Chocolate Cornflakes Tartlets with Quark and Mirabelle Plums

Ingredients
- 80 g dark chocolate
- 50 g cornflakes (unsweetened)
- 1 vanilla pod
- 100 ml light grape juice
- 350 g mirabelle plums (12 mirabelle plums)
- 100 g low-fat quark
- 1 organic lemon
- liquid sweetener (to taste)
Instructions
- 1. Fill a shallow, small pot with some water and place it on the stove.
- 2. Place a heat-resistant bowl that fits perfectly over the pot on top.
- 3. Roughly chop the chocolate with a knife.
- 4. Put the chocolate pieces into the bowl over the water.
- 5. Stir the chocolate slowly until it is completely melted.
- 6. Remove the bowl with the chocolate from the pot.
- 7. Put the cornflakes on a clean work surface.
- 8. Crumble the cornflakes roughly with your fingers.
- 9. Add the crumbled cornflakes to the bowl with the melted chocolate.
- 10. Stir the mixture until all cornflakes are evenly coated with chocolate.
- 11. Place a piece of baking paper flat on your work surface.
- 12. Take a tablespoon of the cornflake-chocolate mixture.
- 13. Shape it into a small portion and place it on the baking paper.
- 14. Repeat this until you have six equal portions on the paper.
- 15. Gently press each portion flat to form round tartlets.
- 16. Let the tartlets cool at room temperature until the chocolate is firm.
- 17. Slice the vanilla pod lengthwise with a sharp knife.
- 18. Scrape out the small black seeds (the pulp) from the pod.
- 19. Put the vanilla pulp and grape juice into a small pot.
- 20. Bring the mixture to a boil on the stove.
- 21. Let the liquid reduce at high heat for 5 to 7 minutes.
- 22. Wash the mirabelle plums under running water.
- 23. Dry the fruits and cut them in half.
- 24. Remove the pits from the mirabelle halves.
- 25. Cut the pitted mirabelles into small wedges.
- 26. Add the mirabelle wedges to the reduced grape juice.
- 27. Let the fruits cook in the juice for 3 to 4 minutes.
- 28. Remove the pot from the stove and let the mixture cool down.
- 29. Put the quark (a type of fresh cheese) into a small bowl.
- 30. Whisk the quark with a whisk until creamy and smooth.
- 31. Rinse a lemon with hot water and dry it.
- 32. Grate the fine, orange-colored zest of the lemon finely.
- 33. Stir the lemon zest into the quark.
- 34. Season the quark to taste with sweetener if desired.
- 35. Place a spoonful of quark on each cooled tartlet.
- 36. Distribute the mirabelles and grape juice evenly on top.
- 37. Drizzle the remaining reduced grape juice over the tartlets.
- 38. Serve the tartlets immediately.
