Ingredients
- 10 garlic cloves
- 1 sprig sage
- 2 sprigs thyme
- salt
- pepper (from the mill)
- 2 bay leaves
- 4 tbsp olive oil
- 4 slices white bread
- 4 tbsp hard cheese
Instructions
- 1. Peel the garlic cloves and chop them finely.
- 2. Crush the chopped garlic in a mortar to form a paste.
- 3. Rinse the fresh herbs under running water and pat them dry.
- 4. Add 1 liter of water, salt, pepper, bay leaves, the herbs, and 2 tablespoons of olive oil to a pot.
- 5. Bring the mixture to a boil on the stove.
- 6. Add the garlic paste to the boiling liquid.
- 7. Let the soup simmer gently on low heat for about 15 minutes.
- 8. Toast the bread slices until golden brown in a toaster or frying pan.
- 9. Place the toast slices onto the serving plates.
- 10. Drizzle the remaining olive oil evenly over the toast slices.
- 11. Spread the cheese evenly over the oil-drizzled toast slices.
- 12. Carefully remove the whole herbs and bay leaves from the soup.
- 13. Season the soup to taste with salt and pepper.
- 14. Pour the hot soup directly over the cheese toast slices.
- 15. Serve the dish immediately to keep the toast crispy.
