🍽️ Garlic Chicken

Ingredients
- 1 chicken (approx. 1,6 kg)
- salt
- pepper (from the mill)
- 50 g butter
- 2 fresh garlic cloves
- 1 unwaxed lemon
- 3 sprigs thyme
- 2 fresh bay leaves
- 1 tsp cumin
- 0.5 tsp peppercorns
Instructions
- 1. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
- 2. Rinse the chicken under cold running water and pat it completely dry with a kitchen towel.
- 3. Season the chicken generously inside and out with salt and pepper.
- 4. Heat a large roasting pan and melt 1 tablespoon of butter in it.
- 5. Sear the chicken on all sides in the hot butter until golden brown.
- 6. Deglaze the pan with a splash of water.
- 7. Peel the garlic cloves and cut them in half lengthwise.
- 8. Slice the lemon into thin rounds.
- 9. Place the halved garlic cloves, lemon slices, thyme sprigs, and bay leaves next to the chicken in the roasting pan.
- 10. Place the chicken in the preheated oven and bake for about 1 hour and 15 minutes.
- 11. Meanwhile, melt the remaining butter in a small saucepan.
- 12. Grind the cumin seeds and peppercorns finely using a mortar and pestle.
- 13. Stir the ground spice mixture into the melted butter.
- 14. Remove the chicken from the oven after the baking time.
- 15. Cut the chicken into four pieces and arrange them on a serving platter.
- 16. Taste the pan juices in the roasting pan and adjust the seasoning with salt and pepper.
- 17. Pour the pan juices over the arranged chicken.
- 18. Serve the dish immediately, ideally accompanied by a fresh salad.
