  1. 1. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
  2. 2. Rinse the chicken under cold running water and pat it completely dry with a kitchen towel.
  3. 3. Season the chicken generously inside and out with salt and pepper.
  4. 4. Heat a large roasting pan and melt 1 tablespoon of butter in it.
  5. 5. Sear the chicken on all sides in the hot butter until golden brown.
  6. 6. Deglaze the pan with a splash of water.
  7. 7. Peel the garlic cloves and cut them in half lengthwise.
  8. 8. Slice the lemon into thin rounds.
  9. 9. Place the halved garlic cloves, lemon slices, thyme sprigs, and bay leaves next to the chicken in the roasting pan.
  10. 10. Place the chicken in the preheated oven and bake for about 1 hour and 15 minutes.
  11. 11. Meanwhile, melt the remaining butter in a small saucepan.
  12. 12. Grind the cumin seeds and peppercorns finely using a mortar and pestle.
  13. 13. Stir the ground spice mixture into the melted butter.
  14. 14. Remove the chicken from the oven after the baking time.
  15. 15. Cut the chicken into four pieces and arrange them on a serving platter.
  16. 16. Taste the pan juices in the roasting pan and adjust the seasoning with salt and pepper.
  17. 17. Pour the pan juices over the arranged chicken.
  18. 18. Serve the dish immediately, ideally accompanied by a fresh salad.
