  1. 1. Peel the garlic cloves and the shallot.
  2. 2. Slice the garlic into thin pieces.
  3. 3. Put the olive oil in a pan and heat it over low heat.
  4. 4. Fry the garlic slices in the oil until they lose their color and become translucent.
  5. 5. Remove the garlic slices from the pan and set them aside.
  6. 6. Dice the shallot into very small cubes.
  7. 7. Increase the heat on the pan.
  8. 8. Fry the shallot cubes in the remaining oil for 1 to 2 minutes until lightly golden brown.
  9. 9. Take 2 to 3 of the reserved garlic slices for decoration.
  10. 10. Put the remaining garlic, the fried shallots, and the cooking fat into a blender.
  11. 11. Put the vinegar into the blender.
  12. 12. Blend the ingredients on high speed for 1 to 2 minutes until the mixture is smooth.
  13. 13. Add a little water if the dressing is too thick.
  14. 14. Season the dressing with sugar, salt, and pepper to taste.
  15. 15. Fill the dressing into small bowls.
  16. 16. Garnish the dressing with the reserved garlic slices.
  17. 17. Serve the dressing together with the salad.
