🍽️ Creamy Garlic Soup with Red Mullet

Ingredients
- 1 onion
- 8 garlic cloves
- 3 tbsp butter
- 2 tbsp flour
- meat broth
- 4 redfish fillets (, kitchen-ready, with skin)
- salt
- pepper (from the mill)
- 2 tbsp olive oil
- 30 g butter
- 100 g sour cream
- lemon juice
- nutmeg
- garlic flower (for sprinkling)
Instructions
- 1. Peel the onion and the garlic.
- 2. Dice the onion into very fine cubes.
- 3. Halve the garlic cloves.
- 4. Melt 2 tablespoons of hot butter in a pot.
- 5. Sauté the onion cubes in the butter.
- 6. Stir the garlic into the onions.
- 7. Dust the mixture with the flour.
- 8. Deglaze the pot with the meat broth.
- 9. Let the soup simmer gently for about 15 minutes.
- 10. Stir the soup occasionally while it simmers.
- 11. Wash the fish under running water.
- 12. Pat the fish dry with a kitchen towel.
- 13. Season the fish with salt and pepper.
- 14. Heat oil in a frying pan.
- 15. Fry the fish for about 2 minutes on the skin side.
- 16. Turn the fish over to the other side.
- 17. Remove the pan from the heat.
- 18. Stir in small pieces of butter into the fish.
- 19. Let the fish become translucent.
- 20. Add the sour cream to the soup.
- 21. Blend the soup until smooth.
- 22. Season the soup with lemon juice.
- 23. Season the soup with salt and pepper.
- 24. Season the soup with nutmeg.
- 25. Warm the serving bowls.
- 26. Divide the soup among the pre-warmed bowls.
- 27. Sprinkle the soup with garlic flowers.
- 28. Place a halved fish fillet on top of the soup.
