🍽️ Smarter Garlic Dip

Ingredients
- 100 g large cold potatoes (1 large cold potato; peeled, from the day before)
- 2 garlic cloves
- salt
- 0.5 small lemon
- 150 g silken tofu
- 100 g salad cream (32% fat content)
- 2 tbsp milk (1.5% fat)
- white pepper
Instructions
- 1. Press the cooked potato through a potato ricer into a large bowl. Alternatively, mash it very finely using a potato masher.
- 2. Peel the garlic cloves and dice them into small cubes. Sprinkle the cubes with a pinch of salt. Use the flat back of a large chef's knife to crush the garlic into a fine paste. Add this paste to the potato in the bowl.
- 3. Squeeze the half lemon. Measure out exactly 2 to 3 teaspoons of lemon juice. Add this juice along with the tofu, salad cream, and milk to the potato mixture in the bowl.
- 4. Mix all ingredients using the beaters of a hand mixer until a smooth cream forms. Season the cream to taste with salt and pepper. Place the bowl in the refrigerator for at least 15 minutes to allow the flavors to meld.
