  3. 3. Continue beating until a thick, uniform mayonnaise has formed.
  4. 4. Peel the galangal root and grate it finely into the mayonnaise.
  5. 5. Stir the soy sauce into the mixture.
  6. 6. Finally, season the mayonnaise to taste with salt and pepper.
  7. 7. Peel the regular onion and the garlic.
  8. 8. Wash and clean the spring onions.
  9. 9. Wash the chili pepper and cut it lengthwise.
  10. 10. Remove the seeds and the white inner membrane of the chili.
  11. 11. Dice the onion, garlic, spring onions, and chili very finely.
  12. 12. Gently fold the diced ingredients into the mayonnaise.
  13. 13. Add lime juice and adjust the seasoning to taste.
  14. 14. Serve the sauce with poultry, veal, beef, or pork.
