🍽️ Garlic Mayonnaise with Galangal

Ingredients
- 2 egg yolks
- 50 ml olive oil
- 50 ml peanut oil
- 60 g galangal
- 1 tsp soy sauce
- salt
- pepper (white, freshly ground)
- 20 g onions
- 3 garlic cloves
- 1 spring onion
- 1 red chili pepper
- lime juice (to taste)
Instructions
- 1. Beat the egg yolks with a hand mixer until creamy.
- 2. Slowly drizzle the oil into the egg yolk mixture while stirring continuously.
- 3. Continue beating until a thick, uniform mayonnaise has formed.
- 4. Peel the galangal root and grate it finely into the mayonnaise.
- 5. Stir the soy sauce into the mixture.
- 6. Finally, season the mayonnaise to taste with salt and pepper.
- 7. Peel the regular onion and the garlic.
- 8. Wash and clean the spring onions.
- 9. Wash the chili pepper and cut it lengthwise.
- 10. Remove the seeds and the white inner membrane of the chili.
- 11. Dice the onion, garlic, spring onions, and chili very finely.
- 12. Gently fold the diced ingredients into the mayonnaise.
- 13. Add lime juice and adjust the seasoning to taste.
- 14. Serve the sauce with poultry, veal, beef, or pork.
