  2. 2. Rinse the peeled cloves under running water.
  3. 3. Bring a pot of water and salt to a boil.
  4. 4. Add the garlic cloves to the boiling water.
  5. 5. Cook the cloves in the water for 5 minutes (this is called blanching).
  6. 6. Remove the garlic cloves from the water.
  7. 7. Let the water drain well from the cloves.
  8. 8. Let the cloves cool down completely.
  9. 9. Place the cooled garlic cloves together with the thyme into a clean, sterile jar.
  10. 10. Pour the olive oil over the ingredients until they are completely covered.
  11. 11. Seal the jar tightly.
  12. 12. Store the jar in a dark and cool place.
  13. 13. Let the garlic cloves infuse in the oil for at least 2 weeks.
