🍽️ Garlic Chicken

Ingredients
- 1 fresh whole chicken (approx. 1,5 - 1,7 kg)
- salt
- pepper (from the mill)
- 3 tbsp clarified butter
- 40 cloves garlic
- 1 sprig thyme
- 1 sprig rosemary
- 4 large potatoes
- 125 ml dry white wine
Instructions
- 1. Rinse the chicken under running water.
- 2. Pat the chicken dry inside and out with kitchen paper.
- 3. Rub the chicken all over with salt and pepper.
- 4. Preheat the oven to 160 degrees.
- 5. Heat ghee in a casserole dish.
- 6. Fry the chicken on all sides until golden brown.
- 7. Add the garlic cloves in their shells and the herbs to the casserole.
- 8. Place the lid on the casserole.
- 9. Place the casserole on the lower rack in the preheated oven.
- 10. Roast the chicken for a while and baste it occasionally with the pan juices.
- 11. Wash the potatoes.
- 12. Peel the potatoes.
- 13. Quarter the potatoes.
- 14. Arrange the potatoes around the chicken in the casserole.
- 15. Pour wine over the chicken and potatoes.
- 16. Let the dish roast covered for another 45 minutes.
- 17. Remove the lid for the last 15 minutes.
- 18. Arrange the chicken, potatoes, and garlic on a platter.
- 19. Pour the pan juices over the dish.
- 20. Carve the chicken at the table.
- 21. Squeeze the soft pulp of the garlic cloves out of the shells.
- 22. Spread the garlic pulp on crispy baguette.
