  2. 2. Pat the chicken dry inside and out with kitchen paper.
  3. 3. Rub the chicken all over with salt and pepper.
  4. 4. Preheat the oven to 160 degrees.
  5. 5. Heat ghee in a casserole dish.
  6. 6. Fry the chicken on all sides until golden brown.
  7. 7. Add the garlic cloves in their shells and the herbs to the casserole.
  8. 8. Place the lid on the casserole.
  9. 9. Place the casserole on the lower rack in the preheated oven.
  10. 10. Roast the chicken for a while and baste it occasionally with the pan juices.
  11. 11. Wash the potatoes.
  12. 12. Peel the potatoes.
  13. 13. Quarter the potatoes.
  14. 14. Arrange the potatoes around the chicken in the casserole.
  15. 15. Pour wine over the chicken and potatoes.
  16. 16. Let the dish roast covered for another 45 minutes.
  17. 17. Remove the lid for the last 15 minutes.
  18. 18. Arrange the chicken, potatoes, and garlic on a platter.
  19. 19. Pour the pan juices over the dish.
  20. 20. Carve the chicken at the table.
  21. 21. Squeeze the soft pulp of the garlic cloves out of the shells.
  22. 22. Spread the garlic pulp on crispy baguette.
