🍽️ Garlic Artichokes

Ingredients
- 50 ml lemon juice
- 750 g artichokes (6 artichokes)
- 3 garlic cloves
- 200 g cherry tomatoes
- 2 tbsp finely chopped parsley
- 2 tbsp olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Add 1 liter of water, a pinch of salt, and the lemon juice to a large pot.
- 2. Use kitchen scissors to cut off the top third of the artichoke leaves.
- 3. Remove the tough outer leaves of the artichokes.
- 4. Thinly peel around the base of the artichoke stems.
- 5. Peel the stems tapering downwards.
- 6. Place the prepared artichokes immediately into the lemon water.
- 7. Bring the water in the pot to a boil.
- 8. Simmer the artichokes over low heat for 10 minutes with the lid off.
- 9. Remove the pot from the heat and let the artichokes cool slightly in the broth.
- 10. Drain the artichokes.
- 11. Cut the artichokes lengthwise into eighths.
- 12. Heat the oil in a large non-stick pan.
- 13. Fry the artichokes at medium heat for 5 minutes until golden yellow.
- 14. Add the garlic and parsley to the pan.
- 15. Fry the mixture for another 2 minutes, turning occasionally.
- 16. Season the dish with salt and pepper.
- 17. Serve the artichokes warm.
