  1. 1. Add 1 liter of water, a pinch of salt, and the lemon juice to a large pot.
  2. 2. Use kitchen scissors to cut off the top third of the artichoke leaves.
  3. 3. Remove the tough outer leaves of the artichokes.
  4. 4. Thinly peel around the base of the artichoke stems.
  5. 5. Peel the stems tapering downwards.
  6. 6. Place the prepared artichokes immediately into the lemon water.
  7. 7. Bring the water in the pot to a boil.
  8. 8. Simmer the artichokes over low heat for 10 minutes with the lid off.
  9. 9. Remove the pot from the heat and let the artichokes cool slightly in the broth.
  10. 10. Drain the artichokes.
  11. 11. Cut the artichokes lengthwise into eighths.
  12. 12. Heat the oil in a large non-stick pan.
  13. 13. Fry the artichokes at medium heat for 5 minutes until golden yellow.
  14. 14. Add the garlic and parsley to the pan.
  15. 15. Fry the mixture for another 2 minutes, turning occasionally.
  16. 16. Season the dish with salt and pepper.
  17. 17. Serve the artichokes warm.
