  1. 1. Wash the bell peppers thoroughly.
  2. 2. Halve the bell peppers and remove the inside (seeds and membranes).
  3. 3. Dice the flesh of the pepper into very small cubes.
  4. 4. Wash the lamb's lettuce.
  5. 5. Remove any tough stems or wilted leaves from the salad.
  6. 6. Let the salad drain well in a colander.
  7. 7. Take the cream cheese and stir in lemon juice and pepper.
  8. 8. Spread the seasoned cream cheese mixture evenly onto the cracker bread slices.
  9. 9. Place a portion of lamb's lettuce on each slice.
  10. 10. Place a slice of salmon on the salad.
  11. 11. Add some cheese (shredded or sliced) on top.
  12. 12. Sprinkle the prepared pepper cubes over the topped crackers.
  13. 13. Serve the crackers immediately.
