🍽️ Potato Dumplings with Plum Filling

Ingredients
- 400 g mealy-cooking potatoes
- salt
- 130 g flour
- 1 egg
- 12 ripe plums
- 6 tbsp sugar
- flour (for the work surface)
- 150 g butter
- 70 g breadcrumbs
- 0.5 tsp cinnamon
- 3 tbsp sugar
Instructions
- 1. Fill a pot with water and bring it to a boil.
- 2. Thoroughly wash the potatoes under running water.
- 3. Place the unpeeled potatoes into the boiling water.
- 4. Cook the potatoes for about 25 minutes until they are soft.
- 5. Drain the cooking water and let the potatoes steam dry for a moment.
- 6. Peel the warm potatoes.
- 7. Press the hot potatoes through a potato ricer into a large bowl.
- 8. Allow the potato mixture to cool down completely.
- 9. Wash the plums under running water.
- 10. Cut the plums in half lengthwise.
- 11. Remove the pits from the plum halves.
- 12. Weigh out all remaining ingredients for the dough and filling.
- 13. Place the prepared ingredients within easy reach on your work surface.
- 14. Add the flour to the cooled potato mixture.
- 15. Crack an egg into the bowl.
- 16. Add a pinch of salt.
- 17. Knead the ingredients quickly with your hands to form a smooth dough.
- 18. If the dough is too sticky, add a little more flour.
- 19. Let the dough rest for about 20 minutes.
- 20. Divide the dough into two equal portions.
- 21. Dust the work surface with a little flour.
- 22. Shape the first portion of dough into a log about 5 cm long.
- 23. Divide the dough log into 6 equal pieces.
- 24. Repeat the process with the second portion of dough.
- 25. Shape each piece of dough into a small ball.
- 26. Flatten the dough balls.
- 27. Fill one plum half with a little sugar.
- 28. Place the filled plum half in the center of the flattened dough.
- 29. Cover the filling with a second plum half.
- 30. Wrap the plum completely with the dough.
- 31. Reshape the wrapped plum into a ball.
- 32. Bring a large pot of water to a boil.
- 33. Add the dumplings to the boiling water.
- 34. Cook the dumplings for about 20 minutes.
- 35. Gently nudge the dumplings occasionally while cooking so they turn.
- 36. Melt some butter in a small frying pan.
- 37. Fry breadcrumbs in the butter until golden brown.
- 38. Stir cinnamon and sugar into the breadcrumbs.
- 39. Remove the finished dumplings from the water using a slotted spoon.
- 40. Let the dumplings drain for a moment.
- 41. Serve the dumplings on plates.
- 42. Sprinkle the dumplings with the breadcrumb mixture.
