  5. 5. Drain the cooking water and let the potatoes steam dry for a moment.
  6. 6. Peel the warm potatoes.
  7. 7. Press the hot potatoes through a potato ricer into a large bowl.
  8. 8. Allow the potato mixture to cool down completely.
  9. 9. Wash the plums under running water.
  10. 10. Cut the plums in half lengthwise.
  11. 11. Remove the pits from the plum halves.
  12. 12. Weigh out all remaining ingredients for the dough and filling.
  13. 13. Place the prepared ingredients within easy reach on your work surface.
  14. 14. Add the flour to the cooled potato mixture.
  15. 15. Crack an egg into the bowl.
  16. 16. Add a pinch of salt.
