Ingredients
- butter (for the ramekins)
- 4 eggs
- 80 g butter
- 1 tbsp freshly chopped parsley
- 1 pinch nutmeg (freshly grated)
- 150 g freshly grated cheese (e.g. Emmentaler, Greyerzer)
- 4 tbsp whipping cream (30%)
- 2 tbsp crème fraîche
- 2 tbsp flour
- salt
Instructions
- 1. Brush the ovenproof ramekins with butter.
- 2. Dust the ramekins with breadcrumbs.
- 3. Preheat the oven to 200 degrees Celsius.
- 4. Use top and bottom heat.
- 5. Separate the eggs.
- 6. Beat the butter with the egg yolks until creamy.
- 7. Add the chopped parsley.
- 8. Add a pinch of ground nutmeg.
- 9. Stir in the grated cheeses.
- 10. Add the cream.
- 11. Add the crème fraîche.
- 12. Whip the egg whites until stiff.
- 13. Fold the whipped egg whites into the mixture.
- 14. Add the flour.
- 15. Gently fold in the flour.
- 16. Season the mixture with a pinch of salt.
- 17. Fill the mixture into the ramekins.
- 18. Bake the soufflés for about 15 minutes.
- 19. Bake them until golden brown.
- 20. Serve the soufflés immediately.
